Recipe Ingredients
15g/½oz root ginger
8-10 chillies
2kg/4lb green tomatoes, chopped
500g/1lb apples, peeled, cored and chopped
250g/8oz raisins, chopped
625g/1¼lb shallots, chopped
2 tsp salt
500g/1lb brown sugar
570ml/1 pint malt vinegar!

Preparation: less than 30 mins. Cooking time: 30 mins to 1 hour. Makes approx. 8 jars

 

My Make at home method for green tomato chutney is:

1. Bruise the ginger and tie in a muslin bag with the chillies.

2. Place all the other ingredients in a preserving pan and suspend the muslin bag among them.

3. Bring to the boil, stirring until the sugar has dissolved, and simmer until the desired consistency is reached.

4. Remove the muslin bag. Pour into warmed sterilised jars, cover and label.

Green Tomato Chutney flavouring

Flavour is everything in cooking so the types of sugar, mustard, apples and vinegar are up to you. The choice is yours.

You can also add raisins, sultanas, curry spice, pepper, cinnamon, cloves, in fact any condiment or fruit that you think will taste good mixed together.

Just put them in the same saucepan as the main ingredients. A chutney is usually a reduction of fruit or vegetables that have either a spice or sugar added to create a sweet and or a spicy pickle.

Green Tomato Chutney cooking times

Chutney cooking is about making a reduction in the intensity of food, so first bring the pan to the boil stirring constantly and then turn the heat down to a medium to slow simmer. Stirring occasionally you will see the reduction start to happen and the food will become more tender.

This should be done quite slowly probably 30 to 40 minutes of time and you should expect it to start to look like a wet paste by the time its ready to add the rest of the vinegar.

Stir the vinegar into the chutney. Cook for a further 30 minutes, stirring often, or until thickened. If it's still runny, simmer for another 10-15 minutes. When its reduced divide the hot chutney between sterilised jars and set aside to cool.

Chutney Storage times

Place a disc of waxed paper directly onto the chutney and seal with airtight lids or Cellophane or greaseproof paper and elastic bands.

Store in a cool, dry place, away from direct sunlight, for at least 1 month before eating. It will keep for up to 6 months. Chill after opening and use within 1-2 months.
